Meet Jennifer Perez, the entrepreneurial force behind Gaspachos Mexican Bites.

Originally from Michoacan, Mexico, Jennifer immigrated to the United States in 2006 at just 19 years old.

Despite facing challenges as a young, single mother, she pursued her dream of entrepreneurship alongside her career in the medical field.

In 2015, Jennifer launched Gaspachos Mexican Fruits & Cravings, selling Mexican snacks and fruits from a humble trailer. Despite doubts at first, she ventured into food trucks and made a mark in Houston’s parks. Even with the difficulties brought by the COVID-19 pandemic, Jennifer’s steadfast dedication drove her business to greater success.

Thanks to her dedication and the support of her community, she landed spots at major events and parks like Hermann Park, Buffalo Bayou, and Minute Maid. In 2023, Jennifer became the owner of Gaspachos Mexican Bites kiosk at Levy Park.

Today, Jennifer’s story serves as an inspiration, showcasing the power of determination and entrepreneurship to overcome adversity and transform dreams into reality.
