Meet Jennifer Perez, the entrepreneurial force behind Gaspachos Mexican Bites.

Originally from Michoacan, Mexico, Jennifer immigrated to the U.S. in 2006 at age 19. As a young single mother, she pursued entrepreneurship while building a career in the medical field.

In 2015, she founded Gaspachos Mexican Fruits & Cravings, starting with a humble trailer selling Mexican snacks and fruits. She later expanded into food trucks across Houston’s parks, overcoming initial doubts and the challenges of COVID-19 through determination and community support.

Her success led to opportunities at major locations and events, including Hermann Park, Buffalo Bayou, and Minute Maid. In 2023, she became the owner of the Gaspachos Mexican Bites kiosk at Levy Park.

Today, Jennifer’s story is an inspiring example of resilience, determination, and entrepreneurship turning adversity into success.
